I would take:

-MAX 2
-EXTREME 2
-SuperNOVA
and
-ITG

There's enough variety of stages between them that you could play a good session or two per day, and still keep everything relatively fresh.

Another approach would be to just take the PS1 titles, and relive the days of no-speed-mods, and system-porting edits. ;p
