I believe everything is done with a keyboard synthesizer.

As for which setting, I'd have to play around with the keyboard a bit to figure that out.

It is a koto (kindof a floor harp).

Of course in the case of Sakura and Tsugaru, it's actually a synthesizer with a koto sound E10.gif

Yeah that would clear things up. It always looked to me like they were holding telephone poles in the apple mix vid.

Sakura has four different Japanese instruments in it (IIRC):
- Koto
- Shamisen
- Japanese Woodblock
- Bamboo Flute
