I'm going to have to agree with this ongoing trend myself...
It comes down to a few different factors as to why ITGs arrows seem to just look and feel better when you play.
FPS is the big thing i think... although they did make a huge upgrade from 4th to 5th mix in DDR, pumping up the arrows any faster than probably 400 BPM will create choppiness and just makes them hard to read. ITG has a much higher framerate than DDR Ex as it is, so the arrows just tend to "glide" better.
Next is Background. Yup... you'll see that DDR backgrounds are bright, flashy, and sometimes distracting. Also the default brightness for it is a whopping 80%. The colors and backgrounds in ITG are a bit darker and not so flashy (not to mention oh so much more sophisticated), and the default background brightness is only 50%.
Finally, for you sightreaders, the ITG play field is a little bigger than that of DDR, you can actually see the arrows come up from the very bottom of the screen, aside from DDR always having the score bar at the bottom, cutting a little bit of it away (which they switched to full screen in the home version of DDR Ex).
